It’s a lot warmer this weekend, things are looking up. It was nice having 4 days off, still one more to go.

Memorial Day does make me reflect on this country that I’ve became a part of.  I remember that when I got naturalized, I was asked whether I would bare arms for this country. I can say that I respect all those who have died for our freedoms, there are more than a million men and women who have died to ensure the freedom of this country. I do think that this freedom that we have is important and we should take the time to reflect on it. Tomorrow at 3PM everyone is joining, no matter where they are, to reflect on those memories.

Friday, I tried making Eggplant Parmesan for the first time.  I also realized how expensive cheese is. I must say, even if it’s the most expensive meal that I’ve ever made, it was delicious. I got very nice eggplants from a tiny shop down the street.

I looked up a few recipes online and decided to just use my judgement when making it.
Egg Plant Parmesan
This is basically layers of Tomato Paste, Spaghetti Sauce, Fresh Tomatoes, Basil (I didn’t get fresh ones so I used the herbs from my spice rack which wasn’t so bad), 1/4 inch cuts of eggplants, Mozzarella Cheese, Parmesan Cheese.

My bf and I finished it up with a Piña Colada.

Yesterday I got to hang out with Johanna and her bf’s friends. They seemed all like great people with good energy. Alex and I also went to hang out with his coworker, I feel great meeting new people.
